Pit People: Lindsay


Hey Y’all!

Every day, a hardworking team operates the wood-fired pits at our location so we can serve up that delicious whole-hog BBQ. One of those amazing team members is Lindsay, who comes to us from up North but has been with Sam Jones for over three years. She’s usually busy keeping the pit fires going and cookin’ for all you good folks but we managed to pull her away for a minute to get to know her a bit better.

 

Where abouts are you from?

My family’s from Long Island, NY.

How long have you been at Sam Jones?

I’ve been at Sam Jones for 3 years.

What’s your favorite part of cooking whole hog?

I like the physicality of it. Is there another way to say that? I like the hard work behind it. I like the passion behind it. Yeah, just the care you take of the whole animal.

What’s your favorite way to eat whole hog?

(Sandwich or tray; with a certain side or drink, etc)

Straight out of the belly, off the grill.

If you could cook a hog for anyone alive or dead, who would it be?

Chef Justin Wilson. Remember the Cajun cook? He used to come on channel 4. He always drank red wine, wore the suspenders. That's the first chef that really interested me on TV.

What's the most underrated item on the menu?

Our Pimento Cheese.

What sides do you go for?

Definitely the loaded baked potato or the collars, for sure.
